Cattle : Cattle raised for meat or dairy production, and images from the beef and dairy industries. Although cattle was introduced to America by Columbus over 500 years ago, it was not until the late 19th century that the cattle industry began to expand, facilitated by the disappearance of large buffalo herds and Indians alike, as well as the coming of the railroad. Americans consumed 28 billion pounds of beef in 2006. For this purpose, 33.698 million head (27 million steers and heifers and 5.43 million cull beef and dairy cows) were slaughtered that year. As of January 1, 2007, the total count of U.S. cattle was 97 million head.
